Chef and owner Fred Dominguez has a passion for good Mexican food. In Fred's own words "I wanted to bring great tasting quality Mexican food to my friends and neighbors".
Fred adds his NECI training and Mexican family recipes to bring you a menu of traditional and contemporary Mexican cuisine.
He also offers daily specials. Combining the best local ingredients and authentic spices, everything is fresh and all of the sauces are made in house.
Frederico Dominguez, a second generation Mexican-American from Los Angeles California, was brought up in both East L.A. and Chihuahua Mexico. He learned the art of creating and serving quality Mexican food from his mother and grandmother by working in the kitchen of La Mixteca, the family restaurant.
After spending most of his life working in restaurants and as a butcher, he decided to further his education. In 1989, he packed up his family and moved to Vermont to attend the New England Culinary Institute. After working many years as a chef in the restaurants of Stowe and Burlington, Fred started selling his own authentic Mexican food at local farmers markets and select food Cooperatives gaining a local, but loyal, following. Even the harshest skeptics have praised his food and began asking why there was not a restaurant.
